Preparation

INGREDIENTS
- 1 lb. boneless, skinless chicken breasts
- Kosher salt and pepper
- 1/4 c. olive oil
- 1 tbsp. lemon zest
- 2 tbsp. lemon juice
- 1 baguette
- 2 tsp. Dijon mustard
- 2 tsp. anchovy paste
- 1 oz. Parmesan, grated
- 1 romaine heart, torn into large pieces
DIRECTIONS
- Season chicken with 1/2 tsp each salt and pepper, then grill to cook through. Let rest for at least 10 minutes before slicing.
- In a bowl, combine oil, lemon zest, lemon juice, Dijon mustard, anchovy paste, and Parmesan.
- Split baguette and spread dressing on each side. Layer with sliced chicken and romaine. Wrap in plastic and weigh down for at least 10 minutes before cutting into 8 pieces.
