Grilled Chicken Caesar Baguette: Make this ultimate salad meets sandwich combo for a picnic a few hours in advance. It gets even tastier with time!

A recipe that’s easy to prepare and makes flavorful, juicy chicken breasts, every time.

Preparation

YIELDS: 8 servings

INGREDIENTS

  • 1 lb. boneless, skinless chicken breasts
  • Kosher salt and pepper
  • 1/4 c. olive oil
  • 1 tbsp. lemon zest
  • 2 tbsp. lemon juice
  • 1 baguette
  • 2 tsp. Dijon mustard
  • 2 tsp. anchovy paste
  • 1 oz. Parmesan, grated
  • 1 romaine heart, torn into large pieces

DIRECTIONS

  1. Season chicken with 1/2 tsp each salt and pepper, then grill to cook through. Let rest for at least 10 minutes before slicing. 
  2. In a bowl, combine oil, lemon zest, lemon juice, Dijon mustard, anchovy paste, and Parmesan.
  3. Split baguette and spread dressing on each side. Layer with sliced chicken and romaine. Wrap in plastic and weigh down for at least 10 minutes before cutting into 8 pieces.
