INGREDIENTS
- 1/2 small red onion, thinly sliced
- 2 tbsp. fresh lime juice, plus lime wedges for serving
- Kosher salt
- 1 ripe (but firm) mango, thinly sliced
- 1 small seedless cucumber, thinly sliced into half-moons
- Pepper
- 1 tbsp. olive oil
- 1 tbsp. salt-free jerk seasoning
- 8 thin-cut chicken breasts (about 11/2 lbs total)
- 1/4 c. cilantro, chopped
DIRECTIONS
- Heat grill or grill pan over medium. In a large bowl, toss onion, lime juice, and pinch each salt and pepper, then toss with mango and cucumber. Let sit, tossing occasionally, at least 10 minutes.
- Meanwhile, in a small bowl, combine oil, jerk seasoning, and 1/4 teaspoon salt, then rub all over the chicken. Grill until just cooked through, 2 to 4 minutes per side. Fold cilantro into cucumber salad and serve with chicken and lime wedges if desired.
